(Vegan) Dark Chocolate Mousse

We know that certain foods can either promote stress and inflammation or help to mitigate both. With this decadent dark chocolate dessert favorite, you can indulge and do your mind and body good at the same time!
This dairy-free dark chocolate mousse is an excellent source of healthy omega-3 fats, phytonutrients, and magnesium, all of which help maintain your brain’s and body’s health and may help you feel less stressed. The silken tofu makes for a light and creamy texture and has the bonus of providing good fats, fiber, and protein in place of heavy cream. Using 70% dark chocolate that is labeled as “vegan” will keep the full recipe dairy-free, decadent, and a source of anti-inflammatory phytonutrients! Both tofu and dark chocolate are rich in magnesium, which also help regulate blood sugar levels, blood pressure, and aids in energy production. Makes this delicious, simple go-to dessert a keeper to boost your mood and manage or even mitigate stress and inflammation!
INGREDIENTS
- 16 ounces soft (silken) tofu, drained
- 2 tablespoons unsweetened cocoa powder
- 2 tablespoons raw sugar or coconut or date sugar
- 1 teaspoon vanilla extract
- 4 ounces dairy-free (vegan) 70% dark chocolate, chopped
DIRECTIONS
- Place drained tofu, cocoa powder, sugar, and vanilla extract in a blender or food processor and process until entirely smooth.
- Place chopped dark chocolate in a microwave-safe dish. Microwave in 30-second intervals, stirring between each, just until chocolate is entirely melted and smooth.
- Transfer the melted chocolate to the smooth tofu mixture in the food processor. Process 1 minute, until all is combined.
- Transfer the mousse to a serving bowl or individual serving dishes. Cover and refrigerate at least 1 hour, to set, before serving.
- Serve dusted with additional cocoa powder or topped with cacao nibs, if desired. You can also top with fresh berries and a dollop of plant-based whipped cream or cashew/almond yogurt.
Helpful Tips
For the absolute smoothest texture, let the tofu come to room temperature before preparing, as cold tofu can harden the melted chocolate before it gets a chance to fully mix into the mousse.
