Black Bean Burgers

A plant-based burger that actually satisfies, these Summertime Black Bean Burgers are packed with 19 grams of protein and 11 grams of fiber to keep you fueled all day. Cumin, chili powder, and fresh bell pepper give every patty bold flavor, while chopped
walnuts add a satisfying heartiness you won't expect. Top with creamy avocado and all your favorite fixings for a weeknight dinner worth repeating.

INGREDIENTS
1 can black beans, rinsed and drained well
1/2 cup rolled oats
1 large egg white
2 cloves garlic
1 teaspoon each: chili powder, ground cumin, and onion powder
1/2 teaspoon each: salt and pepper
1/4 small red bell pepper, chopped
1/4 cup chopped walnuts
Olive oil spray
4 whole wheat buns
1/2 cup mashed avocado or guacamole
Lettuce, tomato, and red onion


DIRECTIONS

Set aside 1/4 of the black beans. To a food processor, add the remaining 3/4 black beans, rolled oats, egg whites, garlic, chili powder, cumin, onion powder, salt, and pepper. Process until smooth.

Add the reserved black beans, bell pepper, and walnuts and pulse just until added ingredients are minced and dispersed throughout. Let sit 5 minutes.

Form the mixture into 4 patties.

Lightly spray a nonstick skillet with olive oil spray and place over medium heat. Cook the patties for 5 minutes on each side, just until lightly browned on the outside and hot throughout.

Serve each burger on a bun with lettuce, tomato, red onion, and 2 tablespoons of mashed avocado. Or serve over a mixed green salad with the avocado dolloped over top.
