Winter Brussels Sprouts Salad

Packed with fiber and antioxidant-rich sprouts and pomegranate seeds, as well as healthy fats from fragrant toasted pine nuts, this salad delivers on nutrition and flavor. INGREDIENTS

1/4 cup pine nuts
1 pound Brussels sprouts, thinly sliced or shaved
2 shallots, thinly sliced
1 tablespoon olive oil
Juice of 1/2 small lemon
2 teaspoons honey
Salt and pepper
1/3 cup pomegranate arils
1/4 cup shaved Parmesan cheese
2 tablespoons balsamic glaze


DIRECTIONS

Toast pine nuts in a large dry skillet over medium-low heat. Keep them moving just until golden brown, about 5 minutes. Remove from skillet and set aside.

Raise heat to medium-high and sauté Brussels sprouts and shallots in the olive oil 5 minutes, or until crisp-tender.

Stir in lemon juice and honey and season with salt and pepper to taste.

Serve the warm sprouts and shallots topped with pomegranate arils, shaved Parmesan cheese, and the toasted pine nuts. Drizzle with balsamic glaze.
