Cranberry Oatmeal Cookies

Ingredients:

  • 1 cup butter, softened
  • 1 cup packed brown sugar
  • ½ cup organic cane sugar
  • 2 eggs
  • 1 ½ tsp vanilla
  • 1 ½ cups whole wheat pastry flour (or gluten-free flour)
  • 1 tsp baking soda
  • 1 Tbsp ground cinnamon
  • ¼ tsp salt
  • 3 ½ cups whole oats
  • 2 cups raw cranberries, rinsed

Instructions:

  1. Preheat oven to 350 degrees. 
  2. Combine flour, soda, cinnamon, and salt and set aside. 
  3. Cream together butter and sugar until light and fluffy.
  4. Add eggs and vanilla and beat well. 
  5. Add flour mixture and stir until well-blended. 
  6. Add oats and cranberries to dough and mix well. 
  7. Spoon heaping teaspoonfuls of batter onto a non-stick baking tray or use parchment paper on tray.
  8. Bake for 11 minutes or until golden brown.
  9. Remove to wire rack to cool before munching.
