Stress-busting Asian Turkey Street Tacos

INGREDIENTS

1 bunch bok choy

3 green onions

8 whole wheat tortillas (see tip)

1 1/2 tablespoons sesame oil, divided

1 pound ground turkey breast

1 red bell pepper, diced

1 1/2 teaspoons minced ginger or 1/2 teaspoon ground

1/4 teaspoon pepper

1/4 cup hoisin sauce

Juice of 1/2 orange

1 cup kimchi, drained

1/4 cup plant-based sour cream or plain Greek yogurt

6 radishes, thinly sliced, optional

DIRECTIONS

Trim 3/4 of the stalks from the bok choy and discard. Chop and separate the whites from the leaves. Slice the green onions, separating the whites near the root from the greens.

Lightly brush the 8 tortillas with 1/2 of the sesame oil. Working in batches, place in a skillet over medium heat and lightly brown on one side. Set aside.

Pour the remaining sesame oil in the empty skillet and raise heat to medium-high.

Add the ground turkey to the skillet and crumble as it begins to brown.

Add the diced bell pepper and whites of the bok choy and green onions. Season with ginger and pepper and sauté 5 minutes.

Stir in hoisin sauce, orange juice, and greens of the bok choy and sauté 2 minutes, just until greens have wilted.

Assemble the tacos by topping the browned tortillas with an equal amount of the turkey mixture, kimchi, and sour cream. Top with the greens of the green onions and sliced radishes for crunch, if desired.

Helpful Tip

Look for “soft taco” size tortillas. The whole wheat ones that we found in this size were also labeled as low-carb and were extremely high in fiber, which is one reason this recipe is packed with fiber (though you will also find fiber in the bok choy, kimchi, and bell pepper).
